Pie Crust (for fruit tarts)

Ingredients

  • 4 cups unbleached flour
  • 3/4 cup shortening
  • 3/4 cup margarine
  • 1 egg,beaten
  • 2 1/2 tsp. white sugar
  • 1 1/4 tsp. salt
  • 1 tbsp. lemon juice
  • 1/2 cup ice water

Preparation

Step 1

1. Place flour in a food processor. Cut up shortening and margarine into small chunks. Pulse a few times till chunky.
2. Combine the egg,sugar,salt and lemon juice in a bowl. Add to flour mixture. Pulse until combined.
3. Add half the water and pulse. If needed to hold dough add a little more water at a time. The right amount of water is added when you can form a ball in hands without the dough falling apart. Do not add to much water.
4. Divide dough into 4 equal discs and flatten. Wrap. Chill one hour before rolling. Left over dough may be frozen.
