My Oh My Peanut Butter Pie

A new Southern Lady Magazine arrived not to long ago, and there is nothing quite like, sitting outside on the back patio, sipping a glass of iced tea and looking through a new Southern Living or Southern Lady Magazine (oops, also a Paula Deen magazine). In the midst of this new one, I turn the page and there staring me in the face is this most delicious looking pie. It is simple and scrumptious looking, and with whipping cream, cream cheese and peanut butter, how can it not be awesome?

Ingredients

  • 1 cup creamy peanut butter
  • 8 ounces cream cheese, softened
  • 1/2 cup sugar
  • 4 1/2 cups whipped topping, divided
  • 1 chocolate wafer pie crust
  • 12 ounces chocolate fudge topping, divided
  • 1/2 cup mini-chocolate chip 1/4 cup peanuts, shelled and crushed

Preparation

Step 1

Microwave fudge topping till slightly runny.
Spoon some into bottom of pie shell until just covered. Refrigerate.

Beat 1 cup peanut butter, cream cheese and sugar in large bowl with an electric mixer on medium, till well combined. Fold in 3 cups whipped topping until combined.

Spoon mixture into pie shell. Using a spatula, smooth mixture to edges of pie. Spread remaining whipped topping over this layer.

Using a spoon, drizzle remaining fudge over top of the pie. 5 Sprinkle with chocolate chips and peanuts. Refrigerate until ready to serve
