Reboot - Meal - Corn & Tomato Salsa

Ingredients

  • (makes extra for lunch Day 15)
  • 4 ears of Corn
  • 2 Tomatoes (chopped)
  • 1 sm Onion (chopped)
  • 1 Red Bell Pepper (seeded and chopped)
  • 1 Avocado (diced)
  • 1/2 cup fresh Cilantro (chopped)
  • 2 tbsp fresh Lime juice
  • 2 tsp Cumin
  • 2 tbsp Olive Oil
  • 1 Jalapeno pepper (optional)

Preparation

Step 1

Boil corn for 5 minutes (or roast on grill). Remove kernels from ear. Combine all ingredients in a bowl – refrigerate for at least 1
hour or overnight. Once its cold, Enjoy!
