Pan roasted veal chops with chipotle lime butter

Ingredients
- 4 thick veal chops
- 1 T plus 1 t evoo
- s&p
- 1 stick butter softened
- 2-3 canned chipotle peppers in adobe sauce w 1 T of sauce
- juice of one fresh lime

Preparation
Step 1
in food processor puree peppers with sauce. Add lime juice and butter and s&p-chill till ready to use
preheat oven to 425
heat 1 t oil in oven proof skillet over med high
rub remaining on veal chops and season w salt and pepper
Sear 3 mins on each side til nicely browned
transfer pan to oven and roast 20 mins
remove from pan and put a scoop of chipolte butter on each chop-when melted turn chop to coat other side
serve
