Apple Galette with Cider Drizzle

Ingredients

  • 3 c apple cider
  • 3/4 c heavy cream
  • 4 T butter
  • 1/4 t vanilla
  • 1 sheet puff pastry
  • 1 1/2 lbs. green apples, thinly sliced
  • 1/4 c sugar
  • 1/2 t cinnamon
  • 1 large egg, beaten with 1 t water

Preparation

Step 1

Boil cider until reduced to 1/2 c, 15 mins. Stir in cream & boil until thickened, 2 mins. Pour into bowl, whisk in 2 T butter & vanilla. Refrigerate at least 1 hr. Unfold pastry Roll out to 10x12. Refrigerate on parch ment paper lined baking sheet for 20 mins. Melt 2 T butter. Add apples, 1/4 c sugar & cook, stirring until golden, 6 mins. Stir in cinnamon.

Spread on baking sheet, refrig for 15 min. Position rack in upper third of oven and preheat to 375 deg. Spread apples over crust, leaving 1" border. Using parchment, lift pastry edges and fold in to form a crust, pinching gently to adhere. Brush crust with egg wash; sprinkle with sugar.

Bake until golden, 35 mins. Let cool on rack 15 mins. Cut into slices, top with ice cream and drizzle with cider mix.
