Chocolate Cream Spritz

Ingredients

  • 1 1/2 cup unsalted butter, softened
  • 4 ounces mascarpone or cream cheese
  • 1/2 cup sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1 egg
  • 1 teaspoon vanilla
  • 3 1/4 cup all-purpose flour

Preparation

Step 1

Preheat the oven to 375 degrees.

In a mixing bowl, beat the butter and cheese with an electric mixer for 30 seconds.

Add the sugar, brown sugar, cocoa powder and baking powder until combined, scraping the bowl occasionally.

Beat in the egg and vanilla

Gradually add the flour, beating after each addition. Beat in as much flour as you can with the mixer; stir in the remaining flour.

Put the dough into a cookie press and press onto ungreased cookie sheets.

Bake for 8 to 10 minutes, or until the edges are firm.

Transfer the cookies to a wire rack.
