Lemon-Lime Pudding with Toasted Coconut

Ingredients

  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 3 large egg yolks
  • 2 1/2 cups whole milk
  • zest of 1 lemon and 1 lime
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon salt
  • juice of 1 lemon and 1 lime
  • 2 tablespoons unsalted butter
  • 6 tablespoons sweetened coconut, toasted

Step 1

Mix sugar and corn starch in a heavy bottomed sauce pan. Whisk together egg yolks and milk and add to the pan. Zest lemon and lime and add it, vanilla and the salt to the pan . Turn heat to medium. Stir constantly over medium heat until pudding thickens enough to coat the back of a wooden spoon (about 5 minutes). Remove from heat and stir in lemon and lime juice and butter. Transfer to dessert dishes, cover with plastic wrap and chill for at least 4 hours. Before serving, toast coconut in a dry pan stirring constantly until brown and fragrant. Top each pudding cup with 1 tablespoon toasted coconut and serve.
