Spinach Salad

Ingredients

  • 6-oz. pkg. baby spinach
  • 6 slices bacon, crisply cooked and crumbled
  • 1 onion, chopped
  • 1/2 c. sliced mushrooms
  • 4-oz. container crumbled feta cheese
  • 1 avocado, peeled, pitted, and sliced
  • 1/3 c. oil
  • 2 Tb. sugar
  • 1/4 tsp. mustard
  • 3 Tb. vinegar
  • 1/2 tsp. salt
  • 1 Tb. onion, grated

Preparation

Step 1

In a large bowl, toss together spinach, bacon, onion, mushrooms, cheese, and avocado. Combine remaining ingredients in a jar with a tight-fitting lid; shake well to combine. Pour dressing over salad; toss and serve. Serves 4-6.
