Chicken and Mango Stir-Fry

Ingredients
- 1 pound boneless skinless chicken breast meat, cut into bite-sized pieces
- 1 cup mango OR peach chunks
- Water/oil mixture
- 2 tablespoons sweet-and-sour sauce
- 1/4 cup sliced almonds, toasted
Preparation
Step 1
If using canned fruit, drain, pat dry and set aside. If using fresh fruit, peel and cut into chunks. Spray a large skillet with water/oil mixture over medium-high heat; add chicken to hot skillet and cook for 3 to 5 minutes or until tender and no longer pink in the center; remove skillet from heat. Stir in sweet-and-sour sauce then gently stir in mango OR peach chunks. Return skillet to heat; heat through, about 5 minutes. Sprinkle each serving with 1 tablespoon of toasted almonds.
SERVING SUGGESTION: Whole wheat couscous and a big salad tossed with Easy Balsamic Vinaigrette (see recipe).
