Blueberry Pancakes

Use fresh or frozen blueberries in these delicious pancakes. Beaten egg whites make these pancakes a little lighter, and the blueberries make them delicious. These are great pancakes for any family breakfast. Serve them with maple syrup or a blueberry syrup.
Ingredients
- 2 eggs, separated
- 1 1/2 cups sifted all-purpose flour
- 2 1/4 teaspoons baking powder
- 3 tablespoons sugar
- 3/4 teasooon salt
- 1 cup milk
- 3 tablespoons butter, melted
- 1 cup blueberries, fresh or frozen, thawed
Preparation
Step 1
In a small bowl, beat egg whites until stiff; set aside.
In a separate bowl, sift together flour, baking powder, sugar and salt. Beat egg yolks in a medium mixing bowl; add milk and melted butter. Stir egg mixture into dry ingredients; mix until batter is smooth and stir in blueberries. Fold in beaten egg whites. Bake on hot greased griddle. Makes 12 pancakes.

Easy and Delicious! I made these on the fly this morning, hoping I'd finally found a good pancake recipe. I usually use bisquick and was out. Let me tell you, these pancakes were the best I'd ever made or tasted. My family all had seconds. They were quick and easy to make, and so moist and fluffy! Finally found a good one! I read other user reviews first so I decided to make them with buttermilk. I used to work in a bakery so here is a tip for using frozen blueberries - lightly toss them with a sprinkke of flour to coat - this will prevent the pancake batter from turning blue.
Yum! When I saw egg whites in the recipe I KNEW these would be fluffy and delicious! I previously used the New York Times cookbook recipe but this one is FAR superior!!! I substituted the 1 cup of milk for 1/2 buttermilk, 1/2 whole milk. Next time I'll try all buttermilk. I also made a blueberry compote to go on top (bluberries, sugar and water cooked till reduced) with maple butter (maple syrup and melted butter). Out of this world! This is so decadent that I'm afraid we'll only be able to do it once every 6 months but boy was it worth it!!! ENJOY!!!
Delicious and easy Blueberry pancakes! Just made these for my kids - took about 20 min (including cook time) and they were really really good! The kids loved them!! Super easy .... my batter got a little stiff so the pancakes were quite think, but that didn't effect the taste. Next time I'll probably add just a splash more milk.
Inexpensive and wonderful recipe! This has been a keeper and has become a special treat for sleepovers. The kids are so excited about having their friends over to try my pancakes. I do change it up for them. For example, they like the same recipe without blueberries, but with chocolate chips. I am thinking about trying this recipe using bananas and walnuts.This pancake recipe has also become a tradition for our yearly family sleepover. Happy eating!!

Yummy dellicious!! This was my 1st attempt at homeade pancakes (vs. Bisquick). They turned out great! The whole family loved them. They are well worth the little tiny extra effort. I will never make Bisquick again!

My 1st attempt at homemade. Excellent. I will prob play with this recipe a litte. Thinner pancakes and use buttermilk instead of regular milk.

They didn't take long to make and were probably the best blueberry pancakes I've ever had. I am going to make them this weekend for the rest of the family.
This recipe turned out great! Much better than store bought pancakes or even pancakes from a restaraunt. It was very easy to make as well.
Not too tough to make and better taste than the box. Possibly better using buttermilk instead of the skim milk I had around the house. Better planning for next time will probably yield a better taste. Only got 7 of my 7 inch pancakes out of this batch."
