Insalata di Olive

Olives and orange - one of the best culinary combos there is.

Ingredients

  • 2 cups of mixed olives (different colors and sizes)
  • 5 tbsp chopped fresh oregano
  • 1 fennel bulb, trimmed
  • 1 orange, zested and juiced

Preparation

Step 1

Combine olives and oregano and toss. Set aside.

Shave fennel as thin as possible and add to olives, tossing well. Add zest and juice and toss again, perhaps with a drizzle of great quality extra virgin olive oil.
