Sweet Potato and Apple Casserole


Delicious side dish for Thanksgiving and Christmas dinner. No leftovers everytime I've made it.

  • 3-4 medium sweet potatoes, peeled and sliced a quarter inch pieces.
  • 2 Granny Smith apples, peeled and sliced
  • 3 cups miniature marshmallows
  • 1 cup sugar
  • 1 teaspooon cinnamon
  • 1 teaspoon salt
  • 1/2 cup chopped pecans
  • 2 tbls. cornstarch
  • 1/2 cup of water
  • 1 tbls. butter

Step 1

Slice sweet potatoes 1/4 inch thick. In a lrge buttered baking dish, layer sweet potatoes, apples and marshmallows. Sprinkle with mixture of sugar, cinnamon, salt and pecans. Blend cornstarch and water in small bowl and pour over layers. Dot with butter and bake covered at 350 degrees for 1 hr. I also add more marshmellows to top and brown in oven for a bit before serving
