SOUTHERN PEACH COBBLER

Ingredients

  • 8 fresh peaches (about 6 cups) peeled, pitted and sliced into wedges
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1/4 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1 tsp frsh lemon juice
  • 2 tsps cornstarch

  • 1 cup all-purpose flour
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 6 Tbsps unsalted gutter chilled and cut into small pieces
  • 1/4 cup boiling water

Preparation

Step 1

Preheat oven to 425 degrees.

In a large bowl, combine peaches, sugars, cinnamon, nutmeg, lemon juice and cornstarch. Toss to coat evenly and pour into a 2-quart baking dish. Bake in preheated oven for 10 minutes.

In a large bowl, combine flour, sugars, baking powder and salt. Bend in butter with a pastry blender until mixture resembles coarse meal. Stir in water until just combined.

Remove peaches from oven and drop spoonfuls of topping over them. Sprinkle entire cobbler with a mixture of 3 tablespoons white sugar and teaspoon cinnamon. Bake until topping is golden, about 30 minutes.

ALTERNATE TOPPING:
1 cup flour
1/4 cup white sugar
1/4 cup brown sugar
1 tsp baking powder
2 Tbsps butter, softened
1 egg

Mix all ingredients with a spoon until batter is smooth. Drop batter on top of the filling with a spoon, as evenly as possible. The batter will spread while being cooked. Bake at 350 degrees for 30 minutes. Serve with vanilla ice cream or whipped topping.
