Salsa Verde/Spinach Enchiladas

Ingredients

  • Spinach enchiladas:
  • 2 cups water
  • 8 tomatillos
  • 1 bushel Cilantro
  • 1/2 onion
  • 1 tsp. garlic
  • salt to taste
  • 1/2 avocado
  • 1 tsp. sour cream
  • 1 Tbsp onion in olive oil
  • 2 handfuls spinach
  • 3-4 Tbsp salsa verde
  • Jack cheese
  • warm corn tortillas

Preparation

Step 1

Boil 5 minutes and blend in blender to puree. Add avocado and sour cream and blend for 2-3 minutes.

For Enchiladas:

Heat onion in olive oil. Add 2 handfuls of spinach and let cook down for 2-3 minutes. Add salsa verde and a little jack cheese.

Fill warm corn tortillas with the spinach mixture. Roll up. Top with salsa verde and a little cheese.
Heat in a 350 degree oven for 2-3 minutes to melt cheese.
