Lemonade Cookies (Dairy Free)

Ingredients

  • 2 sticks earth balance
  • 3/4 cup of sugar
  • 1 cup sweetened lemonade mix, divided
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest
  • 2 3/4 cup flour
  • 1 teaspoon baking soda

Preparation

Step 1

Heat oven to 350 degrees. In a large bowl, cream the butter, sugar and 3/4 cup of lemonade mix. Beat in the egg, vanilla extract, and lemon zest.

In a separate bowl combine the flour and baking soda. Add the flour mix to the batter beating until well combined.

Place the remaining 1/4 cup of lemonade mix in a bowl. Form cookie batter into 1 inch balls and roll them in the lemonade mix.

Line a cookie sheet with parchment paper, or grease it. Place balls on a cookie sheet 2 inches apart. Bake the cookies until the edges just turn brown, approximately 10 minutes. Let cookies cool for 2 minutes on the sheet, and then remove to a cooling rack.
