Ingredients
- 1 Tbsp olive oil
- 1/2 cup minced onion
- 1 Tbsp minced garlic
- 1 can diced tomatoes in juice (14.5 oz)
- 1/2 cup ketchup
- 1/4 cup packed light brown sugar
- 1/4 cup cider vinegar
- 1 Tbsp Worcestershire sauce
- 1 Tbsp low-sodium soy sauce
- 1 dried bay leaf
- 1-2 tsp Old Bay seasoning
- 1/2 tsp dried oregano
- 1/2 tsp dried thyme
- 2 Tbsp unsalted butter
- Juice of 1/2 lemon
- Salt, pepper, and Tabasco sauce, to taste
- 12 oz large shrimp, peeled, deveined, tails left on
- Sliced scallion greens, to garnish
Preparation
Step 1
Heat oil in a saute pan over medium. Stir in onion and saute 2 minutes. Add garlic and cook until fragrant, 1 minute.
Add tomatoes, ketchup, brown sugar, vinegar, Worcestershire, soy sauce, bay leaf, Old Bay, oregano, and thyme; bring to a simmer. Reduce heat to medium-low, and cook to thicken, 10-15, minutes.
Stir in butter and lemon juice until butter is melted. Season sauce with salt, pepper, and Tabasco. (Blend sauce in a food processor until smooth, if desired, then return to pan.) Add shrimp to sauce and simmer until cooked through, 1-2 minutes per side.
Garnish shrimp with scallions.
