Brisket by Elkie

Ingredients

  • 3 1/2 pound beef brisket (first-cut is best, but you can use second - it's cheaper)
  • 3 large onions, sliced
  • 1 15-oz can tomato sauce
  • 1/2 cup of sweet red wine, such as Kedem Marsala
  • 1/2 cup of water
  • 3/4 cup oil packed sun-dried tomatoes, drained and cut into slices
  • Salt, pepper

Preparation

Step 1

Preheat oven to 350 degrees.
In a large frying pan, heat up 2 tbsp oil and brown brisket on both sides, whilst sprinkling each side with some salt and pepper. Remove from heat and place in a dutch oven, or some such roasting tin with a lid. Next add all the remaining ingredients on top of brisket. Cover and bake for 3 and 1/2 hours, basting every hour or so, until meat is tender.

Let meat cool, place on cutting board and slice when cooled.
