Ingredients
- 4-1/2 c water
- 4 med carrots, sliced
- 1 onion, chopped
- 2/3 d dried lentils, rinsed
- 1 can (6 oz) tomato paste
- 2 T fresh parsley, minced
- 1 T brown sugar
- 1 T white vinegar
- 1 tsp garlic salt
- 1/2 tsp dried thyme
- 1/4 tsp dill weed
- 1/4 tsp dried tarragon
- 1/4 tsp pepper
- Can add 3 cups of spinach or Kale in last 5 minutes
- Can add turkey sausage or some type of meat if desired

Preparation
Step 1
In a large pan combine water, carrots, onion and lentils. Bring to a boil. Reduce heat, cover and simmer for 20-25 minutes or til tender. Stir in remaining ingredients, return to a boil. Simmer for 5 minutes for flavors to blend. Add spinach or Kale if desired.
