Ingredients

  • 4-1/2 c water
  • 4 med carrots, sliced
  • 1 onion, chopped
  • 2/3 d dried lentils, rinsed
  • 1 can (6 oz) tomato paste
  • 2 T fresh parsley, minced
  • 1 T brown sugar
  • 1 T white vinegar
  • 1 tsp garlic salt
  • 1/2 tsp dried thyme
  • 1/4 tsp dill weed
  • 1/4 tsp dried tarragon
  • 1/4 tsp pepper
  • Can add 3 cups of spinach or Kale in last 5 minutes
  • Can add turkey sausage or some type of meat if desired

Preparation

Step 1

In a large pan combine water, carrots, onion and lentils. Bring to a boil. Reduce heat, cover and simmer for 20-25 minutes or til tender. Stir in remaining ingredients, return to a boil. Simmer for 5 minutes for flavors to blend. Add spinach or Kale if desired.
