Grilled Lemongrass Pork Summer Rolls

Ingredients

  • For Pork:
  • ~1 lb. pork tenderloin, sliced very thinly
  • 1/4 cup shredded lemongrass
  • 3-4 cloves (depending on size), minced
  • 1/8 cup fish sauce
  • 1/8 cup soy sauce
  • 1/8 cup water
  • 1 TB sugar
  • 1 TB sesame oil
  • 1/8 cup cooking oil
  • 1/4 tsp chili paste (sambal oblek) - optional
  • For Rolls:
  • 1/2 cup fresh basil leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh mint leaves
  • 2 green onions, sliced
  • 1/2 package rice noodles
  • 1/2 cucumber, julienned
  • 1 mango, peeled and julienned
  • 1 package rice wrappers
  • Peanut Sauce

Step 1

Stir together in bowl, lemongrass, garlic, fish sauce, soy sauce, sugar, sesame oil, and water. Add pork, combine and marinate for one hour. Then grill pork over medium heat until no longer pink (about 1-2 minutes per side). Set cooked pork aside. Mix in chili paste to taste.

For thin wrappers: Dip wrapper in warm water, allow to soften, then place on paper towels.

Place a couple of slices of pork near the center (slightly more towards you). Add ~2TB of noodles, some herbs, some mango, and some cucumber.

Roll slightly away from you over the mixture and tuck under far side of the mixuture. Then fold in right and left sides of wrapper. Roll forward until all the edges are sealed.

Tip: Do not use too much mixture and keep them tight as you roll them.

Serve with peanut sauce.
