Ingredients

  • 4 C all purpose flour
  • 3 C sugar
  • 2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 1 tsp. baking soda
  • 4 eggs
  • 1 1/2 C canola oil
  • 1 tsp. each coconut, rum and vanilla extract
  • 3 C shredded zucchini
  • 1 can crushed pineapple, drained
  • 1/2 C chopped walnuts or pecans.

Preparation

Step 1

1. Grease loaf pans.
2. Combine flour, sugar baking powder, salt and baking soda. In another bowl, whisk the eggs, oil and extracts. Stir into dry ingredients just until moistened. Fold in zucchini, pineapple and walnuts.
3. Bake at 350 for about 45-55 min.
