Chipotle-Lime Butter

For summer's corn on the cob

Ingredients

  • 1/2 c. salted butter, softened
  • Juce of 1/2 medium sized fresh lime
  • 1 Tbsp. minced shallot
  • 1 Tbsp. minced garlic
  • 1 Tbsp. (or to taste) canned minced chipotle peppers in adobo sauced, drained

Preparation

Step 1

Beat together all ingedients using a hand held mixer until they are well incorporated. Spread the butter mixture down the middle of a piece of parchment and form/roll into a log about 1 1/2" wide. Refrigerate or freeze until it is firm, and then cut into 1/2" thick slices and serve with corn on the cob (or other veggies).
