Russian Style Sauteed Chanterelles
- 4 bacon slices cut 1 1/2" pieces
- 1 pound chanterelles cut into pieces
- 1 medium onion sliced
- Salt to taste
- Freshly-ground black pepper to taste
- 1 tablespoon sour cream - (to 2)
Fry the bacon until it's crisp. Leaving the bacon in the pan, remove all but about 2 tablespoons of the bacon fat.
Place the chanterelles in a large saucepan, add water to cover, and bring to a boil. Drain immediately. Add the mushrooms and onion to the skillet with the bacon. Cook for about 10 minutes over low heat, stirring constantly. Add salt and pepper to taste, and add the sour cream just before serving.
