Ingredients
- 1 pd cooked lobster meat
- 3 egg yolks
- 1 1/2 c heavy cream divided
- 1 T butter
- 2 T sherry
- 3/4 t kosher salt
- 1/8 t cayenne pepper

Preparation
Step 1
Cut lobster in bite size pieces
whisk egg yolks w 1/2 c cream
In large non skillet melt butter
add lobster and toss to coat with butter
add remaining cream, sherry salt and cayenne
simmer 3 minutes to reduce
lower heat
ladle a scant 1/4 c sauce intothe egg yolk mixture-whisk
stir yolk mixture into pan
cook and stir till thick do not boil
serve over hot cooked rice
