Black bean quesadillas

  • 2 cans (15 oz) blackbeans, rinsed and drained
  • 1 jar (8oz) salsa divided
  • 10 flour tortillas
  • 2 cups shredded monterey jack cheese
  • Sour cream



Step 1

In a bowl, mash beans, add 1 cup salsa. Place 5 tortillas on an ungreased cookie sheet. Spread with bean mixture. Sprinkle with cheese and top with remaining tortillas. Bake at 350 for 15-18 mins. Or until crisp and heated through. Cut into wedges and Serve with sour cream and salsa.
