Ingredients
- 16 large sea scallops
- finely grated zest and juice of 2 limes
- 3 Tbsp olive oil
- 1 bunch of dill, chopped
- sea salt and pepper
- mixed salad greens, to serve
Preparation
Step 1
1. Dry the scallops well with paper towels to remove excess water. Cook them on a preheated hot stovetop grill pan for 3 minutes on each side.
2. Meanwhile, mix together the lime zest and juice, oil, and dill and season to taste with salt and pepper.
3. Toss the salad greens in the lime dressing and arrange on 4 plates. Place the scallops on the salad and drizzle with a little more dressing. Serve immediately.
