Biscotti

These are great, super easy, and delicious. If you've eaten commercial biscotti, these tend to be softer (not moist or chewy or anything, it's still biscotti mind you, just... softer).

Ingredients

  • 1/4 cup vegetable oil
  • 1/2 - 1/4 cup white sugar (The person I originally got this recipe from used 1/4 cup, but her recipe said to use 1/2 cup, I tend to split the difference at 3/8 of a cup)
  • 1 1/2 cups and 2 tablespoons all-purpose flour (This depends HIGHLY on the humidity. You'll need enough to make a workable dough. It shouldn't be overly sticky, you should be able to form it fairly easily.)
  • 2 eggs
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons vanilla extract or
  • 2 tsp almond/anise extract, if you'd prefer)

Preparation

Step 1

1. Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets or line with parchment paper.

2. In a medium bowl, beat eggs, oil, sugar and extract until well blended. Combine the flour and baking powder and stir into the egg mixture to form a heavy dough.

3. Divide dough into two pieces. Form each piece into a roll that's a little over 12 inches long. The size is pretty flexible, so just use your judgment. Place roll onto the prepared cookie sheet, and press down to 1/2 inch thickness.

4. Bake for about 20 minutes in the preheated oven, until the biscotti is a light golden brown color.

5. Remove from the baking sheet to cool slightly on a wire rack. Slice each one crosswise (the short way) into 1/2 inch slices. A pizza cutter is fantastic for doing this, by the way.

6. Place the slices cut side up back onto the baking sheet. Bake for an additional 6 to 10 minutes on each side, until the slices are lightly toasted.


So this is the basic recipe for nothing in them biscotti. From here, you can add to make all sorts of great things. My family's favorite is orange cranberry. You zest an orange into the mixture and add about a cup of cranberries. Delicious!

Others that are nice: Almond instead of vanilla extract with toasted almonds in it. Chocolate and dried cherry. Plain.

Once your biscotti is done, you can melt a bit of chocolate and dip it, then dip the chocolate covered biscotti in chopped nuts or crushed candy.

So these are super easy, delicious, and a real treat if you aren't used to fresh biscotti.
