Country-Style Hash Browns

Ingredients

  • 1 Tbsp peanut oil
  • 1 Tbsp unsalted butter
  • 1 lb russet or gold potatoes, peeled, 1/2-inch diced, soaked, rinsed, and dried
  • Salt and pepper to taste

Preparation

Step 1

Heat oil in a medium skiller over medium-high until shimmering. Add butter and swirl in skillet to keep from burning.

Add potatoes when butter is no longer foamy and cook (without stirring) until golden brown on edges, 8-10 minutes.

Stir hash browns and cook until golden brown, 8-10 minutes more, stirring occassionally to brown most sides; season with salt and pepper.
