Ingredients

  • 2 c fresh cranberries
  • 4 cloves garlic unpeeld
  • 1/3 c EVOO
  • 1/4 c lemon juice
  • 1 T dijon
  • 2 t finely shredded lemon peel
  • 4 c chopped kale
  • 2 c wild rice
  • 1 small fennel bulb , cored and shaved
  • 1 c toasted walnuts, chopped
  • 1/2 c thinly sliced rep pepper
  • 1/2 c thinly sliced red onion

Preparation

Step 1

Preheqat oven to 375. Line a baking sheet. Place creanberries and garlic on pan. Drizzle with 1 T EVOO, sprinkle with s & P. Roast for 20 mins. Cool slightly and remove garlic peels and finelt chop.

Dressing... in a screw top jar combine garlic, EVOO remaong, juice, dijon, and lemon peel....shake well.
