Ingredients
- 2 c fresh cranberries
- 4 cloves garlic unpeeld
- 1/3 c EVOO
- 1/4 c lemon juice
- 1 T dijon
- 2 t finely shredded lemon peel
- 4 c chopped kale
- 2 c wild rice
- 1 small fennel bulb , cored and shaved
- 1 c toasted walnuts, chopped
- 1/2 c thinly sliced rep pepper
- 1/2 c thinly sliced red onion

Preparation
Step 1
Preheqat oven to 375. Line a baking sheet. Place creanberries and garlic on pan. Drizzle with 1 T EVOO, sprinkle with s & P. Roast for 20 mins. Cool slightly and remove garlic peels and finelt chop.
Dressing... in a screw top jar combine garlic, EVOO remaong, juice, dijon, and lemon peel....shake well.
