Ingredients
- 1 1/2 c panko seasoned bread crumbs
- 1/2 c grated parmesan
- 1 pork tenderloin about 1 1/4 pds sliced into 1/4 in slices
- 2 beaten eggs
- canola oil for frying
Preparation
Step 1
combine bread crumbs and parmesan on a plate
season pork slices with salt and dip in eggs then coat with bread crumb mixture
fry in batches in oil over medium high heat until golden 2 to 3 mins per side
