Mini Chicken Kievs

Ingredients

  • 2 packages chicken tenderloins
  • 1 cup all purpose flour (sifted).
  • 1 cup seasoned bread crumbs
  • 2 eggs beaten
  • 1 stick butter
  • Freeze dried chives
  • Salt
  • Pepper
  • Vegetable oil

Preparation

Step 1

Place 1 ckicken tenderloin at a time and place between plastic wrap. Take a mallot and gently pound tenderloin until it is thin as you can make it, without tearing the chicken. Remove plastic wrap and put salt, pepper, chives and 2 pats of butter, all in the middle. Gently wrap 1 side of the chicken over and roll gently, like a cigar. Then flap each end inward. Next roll in the flour, then dip in the egg, then roll in the breadcrumbs, also have a spoon handy so you can pour the breadcrumbs over the chicken. Once more gently press the ends of the chicken so they are secure. Repeat until are tenderloins are done. Place in refrigerator for atleast 1/2 hour before cooking. Fill deep frying pan 1/2 way with vegetable oil heat until med high. Gently place each tenderloin in oil, approximately 10 minutes per side, keep checking to make sure they dont burn. Remove from pan and place on paper towels to drain. Serve and enjoy!
