Ingredients

  • 1 slice center-cut bacon or turkey bacon
  • 1/3 cup fat-free liquid egg substitute (like Egg Beaters Original)
  • 1 slice fat-free American cheese
  • Two 6-inch corn tortillas

Preparation

Step 1

Preheat oven to 375 degrees. Spray a baking pan with nonstick spray.

Cook bacon until crispy, either in a skillet over medium heat or on a microwave-safe plate in the microwave. (See package for cook time.)

In a large microwave-safe mug sprayed with nonstick spray, microwave egg substitute for 45 seconds.

Stir and microwave for another 45 seconds, or until set. Mix in cheese, tearing it into pieces as you add it. Chop or crumble bacon, and stir it into the mixture.

Place tortillas between 2 damp paper towels. Microwave for 15 seconds, or until warm and pliable.

Evenly distribute egg mixture between the two tortillas. Tightly roll each tortilla into a tube, and place seam-side down in the baking pan. If needed, secure with toothpicks. Lightly spray with nonstick spray.

Bake until crispy, 10 - 12 minutes. Enjoy!
