Sweet Potato Hash

Step up your side dish game and serve this smoky hash instead of a typical baked potato.

Ingredients

  • 1 (10.5-oz.) package frozen diced sweet potatoes
  • 3/4 c. chopped sweet onion
  • 3 tbsp. extra-virgin olive oil
  • 3/4 tsp. smoked paprika
  • 2 tbsp. grated Parmesan
  • 2 tbsp. sliced fresh chives
  • Kosher salt
  • Freshly ground black pepper

Preparation

Step 1

Cook sweet potatoes and sweet onion in olive oil in a large nonstick skillet over medium-high heat, stirring often, until golden brown, 12 to 14 minutes.

Stir in smoked paprika and cook, 1 minutes.

Top with Parmesan and chives. Season with salt and pepper.
