Sweet Potato Hash

Ingredients
- 1 (10.5-oz.) package frozen diced sweet potatoes
- 3/4 c. chopped sweet onion
- 3 tbsp. extra-virgin olive oil
- 3/4 tsp. smoked paprika
- 2 tbsp. grated Parmesan
- 2 tbsp. sliced fresh chives
- Kosher salt
- Freshly ground black pepper
Preparation
Step 1
Cook sweet potatoes and sweet onion in olive oil in a large nonstick skillet over medium-high heat, stirring often, until golden brown, 12 to 14 minutes.
Stir in smoked paprika and cook, 1 minutes.
Top with Parmesan and chives. Season with salt and pepper.
