Sometimes broccoli rabe just needs to "be."

Ingredients

  • 3 lb broccoli rabe, bottom 2" trimmed
  • 5 salt-packed anchovies, rinsed and fileted
  • 8 cloves of garlic, halved
  • salt and pepper
  • 1/4 cup extra virgin olive oil
  • 1/4 cup toasted breadcrumbs

Preparation

Step 1

Bring a pot of salted water to boil. In a separate pan, heat the oil over medium heat and add garlic and anchovies. Saute until light brown, about 5 minutes. Add broccoli to the water and blanch for 1 minute, then remove and add to the pan. Toss for about 10 minutes - the broccoli should retain its shape.

Transfer to a platter, season aggressively with pepper, and conservatively with salt. Serve with the toasted breadcrumbs.
