Easy Chicken and Pasta

My daughters love this recipe! It is so easy and takes few ingredients making it easy to prepare for their apartment life.

Ingredients

  • Variations include:
  • 1 tablespoon of olive oil
  • 1 pound of skinless/boneless chicken breasts, cut up
  • 1 can of cream of mushroom soup
  • 2 1/4 cups water
  • 1/2 teaspoon dried basil leaves, crushed
  • 2 cups frozen vegetable combination (broccoli, cauliflower, carrots)
  • 2 cups uncooked corkscrew macaroni
  • Grated Parmesan cheese
  • Condensed cream of chicken; uncooked tube shaped macaroni, frozen broccoli, corn and red pepper combinations
  • Condensed cream of cheddar soup; uncooked spaghetti (broken in half) increase water to 2 and 1/2 cups and use 8oz. of the spaghetti , stir fry or Oriental vegetables, no sauce added
  • Condensed cream of celery soup; uncooked bow tie pasta, peas and carrots

Preparation

Step 1

1. In a medium skillet over medium high heat, heat oil. Add chicken and cook until browned, stirring often. Set chicken aside.
2. Add soup, water, basil and vegetables. Heat to a boil. Add UNCOOKED macaroni. Reduce heat to medium. Cook 10 minutes, stirring often.
3. Return chicken to pan. Cook 5 minutes more or until macaroni is done, stirring often. Sprinkle with cheese.
