Blueberry Pancake/Waffle Sauce

  • 2 1/2 cups blueberries, divided
  • 1/2 cup, plus 1 Tbsp water, divided
  • 1/3 cup sugar
  • 1 tsp corn starch

Preparation

Step 1

Boil 2 cups blueberries with 1/2 cup water, and 1/3 cup sugar in a saucepan over medium heat until it begins to thicken, about 10 minutes. Whisk together 1 Tbsp water and 1 tsp corn starch for a slurry in a small bowl, stir into sauce and cook for 1 minute to thicken. Stir in 1/2 cup fresh blueberries and serve.
