Ingredients

  • 2 T butter
  • 1 onion chopped
  • 1/2 c chopped carrots
  • 1/2 c chopped celery
  • 1 small red pepper chopped
  • 2 c chopped unpeeled red potatoes
  • 1/4 t oregano
  • 2 8 oz bottles clam juice
  • 1 pd bay scallops
  • 2 c half and half
  • 1 t salt
  • 1/2 t course black pepper
  • 1/2 c chopped fresh parsley

Preparation

Step 1

melt butter in large saucepan
add onion and next 5 ingredients through oregano and saute 10 mins
add clam jice and scallops. cook 5 mins. add half and half and stir
cook until thoroughly heated
Stir in parsley
