Yule Log Cake

We started making this as a traditional yule log. The family liked it so much we've used it as a family birthday cake (2 layer). This cake is completely flour-less so it's great for people with wheat allergies.

Ingredients

  • 2 c Whipping Cream
  • 1 Vanilla Bean
  • 2 T Powdered Sugar (to taste)
  • 1 T Vanilla Extract
  • 8 Eggs Separated & Room temperature
  • 1 1/3 c sugar (Fine baking)
  • 6 oz Semi Sweet Chocolate (Good Quality)
  • Powdered Sugar

Preparation

Step 1

On the night before, warm whipping cream to scalding. Slit vanilla bean and put into warm cream. Cover and return to fridge and let it sit overnight.

Put Chocolate in double boiler and melt over low heat. When melted set aside to cool slightly. Meanwhile separate eggs.

Beat Egg Whites until mostly stiff and add 2/3 c sugar a little at a time until egg whites are fully stiff. Set aside
In a separate bowl, beat yolks until thick yellow ribbons form, add 2/3 c sugar and beat till fluffy and incorporated. Fold in cool melted chocolate. Add some of the beaten eggs whites and fold in to lighten. Fold in remaining egg whites.
Spread on a cookie sheet lined with wax paper.
Bake at 325 until firm and a tooth pick comes out dry. Cool.

When cool, spread a large clean towel on the counter. Dust with powdered sugar. Invert cookie sheet on towel and use wax paper to help unmold cake in one piece. Peel back wax paper carefully to remove.

Remove vanilla bean from whipping cream and beat til almost stiff. split vanilla bean and add seeds to whipping cream. Add Vanilla and powdered sugar until sweet. Spread sweetened whipping cream on cake and roll up jelly roll fashion using towel to help roll. Place on a platter and refrigerate.

When cooled, frost with a good chocolate butter cream (homemade) and decorate with powdered sugar.
