Baked Chicken and Potato Dinner

Ingredients

  • 4 bone-in skinless chicken breast halves
  • 4 medium russet potatoes, cut into 1" cubes
  • 1 red or green pepper, cut into 1" X 1/2" pieces
  • 1 medium onion, cut into 8 pcs.
  • 2 T. butter, melted
  • 1/4 C. Parmesan cheese
  • 1 t. garlic powder
  • 1 t. paprika

Preparation

Step 1

Heat oven to 400*. Spray 15X10X1 inch baking pan with Pam. Place 1 breast half in each corner of pan. Place vegetables in center of pan. Pour butter over chicken and vegetables; sprinkle evenly with cheese, garlic powder and paprika.

Bake 30 to 35 mins. or until chicken is fork tender and juices run clear, stirring vegetables once halfway through cooking.
