Habanero Hot Sauce

Making homemade hot sauce is fun, albeit somewhat dangerous. You'll feel the burn for days if you get fresh habanero under your fingernails. (Wearing gloves is a good idea) Don't breathe too deeply over the stove, either. The combination of hot vinegar and habaneros is darn near lethal. I suggest you ask your loved ones to leave the house while you make it.

Ingredients

  • 5 to 10 habanero peppers
  • 1/2 cup white vinegar
  • 1/4 cup fresh lime juice
  • 1/2 cup grated carrots
  • 1/3 cup onion chopped
  • 2 cloves garlic,
  • 1/2 teaspoon salt
  • 2 tablespoons water

Preparation

Step 1

Place the carrots, onions, garlic and water in a small sauce pan. Cook over medium heat until soft, stirring frequently to prevent burning. Transfer the hot mixture to a blender, add the chiles ad puree. Return the fortified mixture to the sauce pan. Add vinegar, lime juice and salt. Simmer 10 to 15 minutes. Use a funnel to pour the sauce into sterilized bottles. Refrigerate.
