Autumn Spice Cake

  • 2 cups (packed) brown sugar
  • 1 cup melted butter
  • 1 teaspoon vanilla
  • 2 eggs
  • 1 cup cold coffee
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 2 teaspoons cardamom
  • 1 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 3 cups all-purpose flour
  • 1 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped dark chocolate

Preparation

Step 1

Preheat oven to 375 degrees. Cream together butter, sugar, and vanilla. Add coffee, all spices, salt, and baking powder, and stir thoroughly. Add flour, nuts, raisins, and chocolate and stir well to incorporate. Pour into a greased, floured spring form pan and bake 40 minutes or until a toothpick inserted into the middle comes out clean. Allow to cool at least 20 minutes before cutting. Individual slices can be sprinkled with powdered sugar or served alongside ice cream (or, my preference, a dollop of vanilla Greek style yogurt).
