Ingredients

  • 1 cup sour cream
  • 2 Tbsp prepared horseradish
  • 2 Tbsp Dijon mustard
  • salt and pepper to taste
  • 8 slices pumpernickel bread
  • 8 oz thinly sliced roast beef
  • 4 oz thinly sliced sharp Cheddar
  • 2 cups thinly sliced cucumber (about 1/2 a large cucumber)
  • 1 cup thinly sliced radishes (optional)

Preparation

Step 1

Combine sour cream, horseradish, and Dijon in a bowl; season with salt and pepper.

Spread horseradish sour cream on one side of all eight bread slices.

Layer roast beef, cheese, cucumber, and radishes on horsradish sour cream on four bread slices, horseradish sour cream side down. Cut sandwiches in half.
