Mom’s Apple Cake

Whenever I make my Apple Cake, I’m reminded of the beautiful apple orchards that used to exist here in Northwest Arkansas scattered along the foothills of the Ozarks. Thirty years ago I used to buy fresh picked Red Delicious apples by the bushels sold at roadside stands that used to line the highways. I never canned the apples, but tried to think of different ways to utilize the sweet seasonal fruit.
Just the act of mixing my Apple Cake recipe transports me back in time to a crisp cool Fall afternoon spent picking up pecans shaken from a tree. In between flying blindly through colorful fall leaves, we, my two sisters and myself, worked for what felt like hours hunting the hard rounded oblong shaped nuts. We worked until our fingers were tingly cold within our gloves. Our chilling efforts were rewarded with mugs of hot chocolate and the promise of delicious treats made with the pecans we’d just picked.
All things change with time. I no longer have to wait impatiently for the pecans to be cracked and shelled before I can eat them. I don’t even have to hunt for a roadside stand in which to buy fresh apples. In fact, this is now a very simple, easy recipe, and even though the effort isn’t as great as in the past, the taste is still just as delicious as ever! I made the cake for Thanksgiving AND Christmas this year, and honestly, I think it’s my family (and friends’) new favorite.
Ingredients
- 2 sticks melted margarine
- 1 3/4 cups granulated sugar
- 3 eggs lightly whisked
- 2 cups self-rising flour
- 2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 large or 3 small red delicious apples cored, peeled & chopped (Appx 2 cups)
- 1 cup chopped pecans
Preparation
Step 1
Preheat oven to 350 and spray 13 x 9 pan with non-stick spray.
Mix all together in order given, and pour in prepared pan. I use a metal shiny pan. You may have adjust the temp/time if using a non-stick.
Make sure cake is totally cooled before icing.
*** My husband prefers this cake warm from the oven with just a quick of shake of confectioners sugar across the top!! ENJOY

Cream Cheese Icing:
1 stick melted margarine
1 block of 8 oz cream cheese (room temp)
1 tsp vanilla
16 oz or 1 box confectioners sugar
Make sure cake is totally cooled before icing. My husband prefers this cake warm from the oven with just a quick of shake of confectioners sugar across the top!! ENJOY
