Potato Croquets

Ingredients

  • 2 lbs potatoes, peeled
  • 2 cups of Italian bread crumbs
  • 1/4 cup fresh parsley
  • 3 tsp grated cheese
  • 1 mozzarella, cut into pieces
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 6 eggs
  • 1/2 cup cooking oil

Preparation

Step 1

Boil potatoes until they are soft. Drain. In a bowl mash the potatoes and add the parsley, cheese, salt, pepper, eggs.

Add the mozzarella. Mash all the ingredients together until they are soft and firm. In another bowl put 2 cups of bread crumbs.
Roll the mixture into balls and coat them with bread crumbs. Refrigerate for 15 minutes.

Heat olive oil in a skillet, cook potato balls until they are lightly brown, and then drain off any remaining oil.
