White Bean Chili

Ingredients

  • 1 lb white beans
  • 6 cups chicken broth
  • 2 cloves minced garlic
  • 1 onion, chopped
  • 1 T corn oil
  • 2 4-oz. cans chopped green chilies
  • 2 tsp cumin
  • 1 1/2 tsp oregano
  • 1/4 tsp cayenne pepper
  • 4 cups cooked chicken breast, chopped
  • 3 cups shredded Monterey Jack cheese

Preparation

Step 1

Soak beans in water and cover overnight. Drain. Add chicken broth, garlic, and 1/2 the onion. Bring to boil; Reduce heat. Simmer for 3 hours or until beans are very soft. Saute remaining onion in oil until tender. Add chilies and seasonings. Mix well. Add to beans, along with chicken. Simmer for one hour. Serve topped with cheese.
