Honey-Maple Granola

Ingredients

  • 1 3/4 c rolled oats
  • 1/4 c whole wheat flour
  • 1/4 c honey, heated
  • 1 tsp vanilla extract
  • 1/4 tsp maple extract
  • 1 tbsp water or canola oil
  • 1/4 c chopped nuts, optional
  • 1 tsp ground flaxseed
  • 1 tsp lemon zest, grated, optional
  • 1/4 c shredded coconut, optional
  • 1 tsp ground sunflower seeds, optional
  • 2 tbsp apple juice concentrate
  • 1 c raisins or chopped dates, optional

Preparation

Step 1

Add oats and flour to blender jar and secure lid. Pulse 2–3 times. Add apple juice concentrate, honey, vanilla extract, maple extract, and water or oil. Add any desired optional items except raisins or dates, and pulse 2–3 times. Spread mixture on baking sheets.

Bake for 2 hours at 150°F, stirring every ½ hour. Add raisins or dates, if desired, after baking.
