Pork Roast ala Russo

Ingredients

  • 1 5-6 lb pork tenderloin
  • 3 garlic cloves, cut into slivers
  • salt and pepper to taste
  • 2 cups apple wine, juice, or cider

Step 1

Place pork in roasting pan. Insert slivers of garlic throughout roast. Season with salt and pepper. Pour apple wine over roast before putting into a 325 deg oven. Bake 25 to 30 minutes per pound. As the roast cooks, add additional apple wine to keep pork from drying out.

When the roast is cooked, remove from oven and place on platter. Make gravy from the meat drippings/apple wine remnants, adding a small amount of flour to thicken. Use additional apple wine as necessary. Add canned or fresh sliced mushrooms to gravy.

Serve gravy over roasted pork and mashed potatoes.
