Drop Scotch Cakes

Ingredients

  • 1/4 cup cornstarch
  • 1/2 cup icing sugar
  • 1 1/2 cups flour
  • 1 cup butter or margarine, softened

Preparation

Step 1

In a large bowl add all ingredients at once. Beat with electric mixer until smooth (approx 4 min). Drop by spoonfulls onto a cookie sheet. Bake at 350°F for 12 minutes. The cakes should be a pale golden colour so watch closely. Let cool. Add icing and cherry bits if desired.
