Lemon vinaigrette potato salad

  • 3 lbs. red potatoes, cut into 1 inch cubes
  • 1/2 C olive oil
  • 3 T lemon juice
  • 2 T fresh basil
  • 1 T red wine vinegar
  • 1 t grated lemon peel
  • 3/4 t salt
  • 1/2 t pepper
  • onion (optional)


Preparation time 25mins
Cooking time 15mins


Step 1

Boil potatoes until tender. In another bowl whisk oil, lemon juice, herbs, vinegar, lemon peel, salt and pepper. Drizzle on potatoes, toss to coat. Serve warm or chilled.
