Apple Struesel Cheesecake Bars

Prize-Winning Recipe 2007! Oatmeal cookie mix and pie filling make it easy to get a delicious apple pie-like bar.
Ingredients
- 1 pouch (1 lb 1.5 oz) Betty Crocker Oatmeal Cookie mix
- 1/2 cup firm butter or margarine
- 2 packages (8 oz each) cream cheese, softened
- 1/2 cup sugar
- 2 tablespoons all-purpose flour
- 1 teaspoon vanilla
- 1 egg
- 1 can (21 oz) apple pie filling
- 1/2 teaspoon ground cinnamon
- 1/4 cup chopped walnuts
Preparation
Step 1
Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.
Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.
Bake 35 to 40 minutes longer or until light golden brown. Cool about 30 minutes. Refrigerate to chill, about 2 hours. For bars, cut into 6 rows by 4 rows. Store covered in refrigerator.

I made these yesterday for my daughter who just came home with her new baby. Oh my are they good. I left off the walnuts but honestly they weren't missed. These were easy to made and definitely a bit hit. Another great recipe.
I made these 2 different ways. The first I made according to the recipe..Excellent! Then I switched it up a bit, I used Oatmeal Chocolate Chip Cookie mix and Cherry Pie Filling..Excellent. Everybody loved them both, I cant wait to make them again
I cannot even stress on how amzingly delicious these things are! I have made them SO MANY time because people are always asking for them at get-togethers! Wouldnt change a thing. if you follow directions exactly the way you are supposed to...then it comes out the way its supposed to! YUMMY!!

Made these for some friends of ours... Amazing 5 Spoons! Just make sure you know your making them for a crowd! We had so much of it left over! But, Very easy and tasty! Definitely a keeper!
I have made this quite a few times since I found the recipe. I get compliments all the time when I serve it for company at home or when I take it for dessert at friends. I have had many people ask for the recipe. I did make ONE change for the second time, by accident. I used the Oatmeal Chocolate Chip mix rather than the Oatmeal, because my store didn't have the oatmeal the second time I made it. And it's even better.
Everyone that has tried these bars has loved them. The only thing I can say about them is eat them up fast because after awhile in the fridge the crust does start to become soggy. But this recipe tastes great.
