Salmon with Cucumber-Dill Sauce

Ingredients
- 1 cup dry white wine (or use white grape juice with a splash of cider vinegar)
- 1/2 cup water
- 1 tablespoon lemon juice
- 4 (4-oz.) salmon fillets
- 3/4 cup low fat plain yogurt
- 1/2 cup unpeeled cucumber, finely chopped (about 1/2 small)
- 1 teaspoon dried dill
Preparation
Step 1
In a large skillet with a tight-fitting lid, combine first 3 ingredients (wine through lemon juice); blend well and bring to a boil over medium heat. Add salmon then reduce heat and simmer for 8 minutes or until fish flakes easily when tested with a fork. Meanwhile, in a small bowl, combine yogurt, cucumber and dill; blend well. Gently transfer salmon to a serving platter; spoon cucumber sauce evenly over the top.
SERVING SUGGESTION: Steamed red skinned potatoes, steamed green beans and steamed baby carrots.
